It is a popular restaurant that serves sukiyaki and shabu-shabu using Japanese Black Wagyu for a reasonable price. There is always a line of customers waiting at the entrance of the restaurant, so it is recommended that you make a reservation before going.

Actually it would be better to say that the menu is almost wholy occupied by these two items, and the rest is just composed of side menus that accompanies them. The second floor of a multi-tenant building. Seating 20 people, Ibuki is a small restaurant with only table seats. The kitchen is on the right as you enter the restaurant. Because it is a closed kitchen, you can't see inside. On the left side of the restaurant, table seats are lined up to the back of the restaurant. The hall is L-shaped, and the row of tables on the left is bent to the right according to the shape. There are three four-seat tables and four two-seat tables, and the tables are arranged according to the number of customers.
The interior of the restaurant is unified with tea colors, creating a calm atmosphere. A shoji screen adorns the back wall, which accentuates the room with white and gives it a Japanese flavor. There are many foreign visitors and this style of interior may be for them.
The walls are casually decorated with pictures and decorations, but they are not excessive and are quite tasteful. There is a hanging scroll on the left side when you enter the restaurant with the word Sukiyaki written on it. I wonder if the calligraphist is famous?

Being a sukiyaki and shabu-shabu specialty restaurant, the menu is small. The drink menu is also small, but includes all of the basics that you will want.
The beer offered is Asahi Super Dry in both draft and medium bottle options. This is necessary to respond to many customers who want beer while they wait for their food to be prepared. For sake, there is Hakkaisan, and for shochu there is Kuranoshikori (sweet potato) and Ichibansatsu (barley), each with a glass or bottle option.
As for wine, red wine goes with sukiyaki and Ibuki stocks Santa Helena Siglo De Oro Cabernet Sauvignon in a half bottle. In addition, whiskeys include Black Nikka, sours include Namashibori Lemon Sour, and Shochu Highballs include Oolong Highball. This meat is placed in the sukiyaki pot with vegetables and tofu. It is a Kanto-style sukiyaki that uses warishita stock. Waridashi stock and Japanese soup stock are added and when the bright red marbled meat turns brown it is time to eat. The restaurant staff will make it for you, so all you have to do is sit and watch and then eat it when it's ready. Dip the meat into the raw egg and then place it in your mouth. The moderate sweetness of the warishita stock and the egg combined, and the soft texture of Japanese black beef produce the umami which will spread throughout your mouth.
The meal will take a little time if you plan on chatting and drinking with a friend, but if you eat alone silently, it can be finished in just 30 minutes. If necessary, you can select Added Sukiyaki Meat for 2,700 yen (including tax) or Added Vegetables for 600 yen (including tax).
