The capital city of Piedmont is Turin, and the head chef of KNOCK said he cooked there when he was young. Turin is surrounded by mountains and is not near the sea, so there are few fish dishes. The main ingredients are meat, vegetables, dairy products such as cheese, and dried fruits, nuts, and mushrooms.
